Method

  1. Cook spaghetti
  2. Melt the butter in a small pan
  3. Add garlic and gently sizzle for 1 min, then remove from heat
  4. Lightly beat the cream, eggs, softened garlic, and half the parmesan in a bowl
  5. Stir in the smoked salmon trimmings
  6. Drain the pasta well and return to the pan
  7. Add the salmon mixture and the chives
  8. Toss well so the heat from the pasta lightly thickens the sauce
  9. Serve scattered with the remaining parmesan and plenty of black pepper
