Method

  1. Cut the chicken into pieces
  2. Add the dashi stock to pan and heat
  3. Add mirin, soya sauce, and the sugar
  4. Bring to boil, then simmer on medium heat for a few minutes
  5. Add chicken and cook
  6. Once chicken is done (10–12 minutes), add the onion
  7. Pour into the pan and let it cook a few minutes
  8. Serve and garnish with spring onions
