Method

  1. Measure the mackerel and mascarpone into a food processor and whizz until fairly smooth.
  2. Tip into the bowl, then add the pepper, half the lime zest and all the juice.
  3. Stir to combine and then check the seasoning, adding salt if needed.
  4. Garnish with remaining lime zest.
